    Meet the Artist and Curator Behind The Happy Traveler

    Kim Parsley is a vintage enthusiast, talented curator, and artist living near Seattle, Washington. With an education in interior design and a career in interior architecture, Kim’s natural design skills have flowed seamlessly into her passion for collecting and curating retro treasures. Today, she specializes in vintage travel bars and barware, bringing mid-century charm to the modern cocktail (or mocktail) enthusiast.

    Kim’s work doesn’t stop at curating one-of-a-kind travel bars. While planning to become a “trail angel” (someone who provides food and supplies to tired hikers), Kim realized she needed a way to serve craft cocktails and zero-proof drinks to adventurers. It wasn’t just any setup she wanted—but one that embodied timeless elegance. That’s when she discovered vintage luggage—that iconic blend of retro functionality and beauty—with one flaw. It was designed with classic booze holders in mind but lacked space for proper tools, decanters, and glassware to create memorable drinks properly.

    Determined to create a better solution, Kim designed her first bespoke travel bar—the Happy Traveler. Word quickly spread, and her curated vintage bars became highly sought after for their charm, functionality, and personalization.

    Meeting Kim Parsley

    I met Kim in February 2024 at Seattle Cocktail Week, and her vibrant booth caught my eye immediately. Amidst rows of expertly curated treasures, it was a treat to take in her vintage travel bar collections. Being alcohol-free for nearly 19 years, I often look for unique ways to elevate my own entertaining and mocktail experiences. Kim’s work spoke to me on a personal level. When I discovered she would also curate something special around any theme, I knew exactly what I wanted her to create.

    Growing up, Barbies weren’t a part of my childhood. But as an adult, I’ve embraced the iconic doll, collecting everything from Working Woman Barbie to Elton John Barbie, even Weird Barbie! When I saw Kim’s Barbie Travel Bar for the first time, it was clear this wasn’t just another Barbie accessory—it was the ultimate combination of playfulness, sophistication, and creativity.

    Looking for the perfect bevie to sip on while you re-watch the Barbie movie for the 20th time? Here is a recipe recommended by Kim Parsley. The Pink Lady cocktail looks best when vintage barware is by her side!

    • 60 ml Lyre’s Pink London Spirit
    • 30 ml cloudy apple juice
    • 15 ml pomegranate syrup
    • 30 ml egg whites
    • 1 tsp apple cider vinegar

    Add all ingredients to a cocktail shaker with ice. Shake until chilled. Strain into glass and enjoy.

    Variation The Happy Traveler recommends: Fee Brothers Fee Foam instead of egg whites to give the drink body and a foamy top!
